Let stand for an hour.Drain onions and mix them throuh meat. Fry meat ; use forks to keep it loose; keep warm. Whip eggs loose; mix with milk, celery and parsley. Drop 1 tablespoon of oil in pan and fry a quart of egg mixture.When bottom is clotted put in quart of meat mixture and fold the omelet.
