8 ounces (225g) ground beef
1 1/2 cups refried beans cheese omitted
6 dozen corn tortilla chips
1 1/2 cups shredded monterey cheese
1 1/2 cups shredded mild cheddar cheese
1 large tomato seeded chopped
1/2 cup thinly sliced pickled jalapeno chili’s
1 tablespoon chopped parsley
Bake beef and parsley in skillet over medium heat brown in 15 minutes. Spoon beef out of skillet drain and set aside. Prepare refried beans omitting cheese. Prepare corn tortilla chips. Heat oven to 400F (375F) Mix jack and cheddar cheeses in small bowl reheat refried beans if necessary. Mix beans and beef. Spread 1 teaspoon of beans and beans mixture on each tortilla chip; arrange chips in single layer with edges slightly overlapping on 2 or 3 baking sheets or large ovenproof platters. Sprinkle chips evenly with tomato and chili’s; top with cheese mixture. Bake untill cheese is melted and bubbly 5 to 8 minutes Serve immediately. Enjoy!
