What we need:
2 eggs
3-4 slices cooked or smoked ham like gammon
We prefer not to use too thin sliced ham (& expensive flavored )
because with the eggs we want to have a good taste of ham as well.
paprika powder (a lot)
pickle, finely chopped
bean sprouts
1 tomato cut in slices
We used: cherry tomatoes
If you like: ‘all’ dried herbs you can find
mayonnaise
pepper & salt to taste
3 slices of bread
butter
bean sprouts
optional: 1/4 green bell pepper, sliced

You can eat this bread meal every day, but we don’t…
Most ingedients will be in your fridge.
This is ‘Bacon and Eggs’ the extended version and a good opportunity to cook your self
a tasty meal that looks great. You serve this warm, right away from the frying pan.
Put your 3 slices of bread on a dinner plate and form a ‘wheel'(see photo).
Put all the ingredients on it and in no time you’ll
have a
that only wants one thing;
to be eaten.
This food is not about order; It’s a healthy, happy ‘mess’..!
So, Dont put your pickle in the middle and arrange everything.
Just enjoy it!
When you are two; use two pans to eat at the same time.
You need a medium size frying pan
A little lump of butter .
STEP1
Put in 2 eggs .
Add pepper and salt to taste.
Wait half a minute and put in the slices of ham on the eggs
sprinkle over some paprika (or chili ) and turn around the eggs-ham.
Heat over low heat and fry softly for a +/- 5 minutes.
Can you lift the egg with a spoon? Than turn the omelet around.
Fry the other side over low heat for two – three minutes.
We do-not want our omelet or eggyolk soft drab.
STEP2
We check the other side ;
Is it firm? Than carefully lift it.
Put in the round tomato slices under the ham-egg mixture.
NOTE: We used little cherry tomatoes cut in half; looks nice!
Sometimes we leave the tomato on top mostly we shove it under the omelet cause that works faster.
At the same time add bean sprouts on top of eggs
Warm them a little , move the bean sprouts along the sides .
( you can also take them out of hot water)
STEP3
After a good minute; tomato slices should still be recognizable as such. Beans prouts (and pepper) should not be too soft and hot. Instead they still should be fresh, a little crispy.. Is everything warm?
Put bread slices on plate.
Keep the bean sprouts aside in the pan; place the eggs with the ham on top in the middle of your bread. Sprinkle over a lot of paprika .
Than put over the tomato(s), bean sprouts and finally the fresh unheated chopped pickle.
We also ad a few fresh beansprouts. At last we add a little mayonaise here and there and on top of it all some fine dried herbs; looks nice bit is not neccesarily.
Serve warm. Eat it with fork and knife.
