Yogi rolls

Ingredients

phyllo dough
2 tablespoons oil
1 onion chopped
1/3 cup pine nuts
500g ground vegetarian meat
375g phyllo
80 g butter
1 tablespoon chopped celery
YOGHURT SAUCE:
1/4 cucumber
2 dl yoghurt
1 tablespoon fresh coriander chopped

more:

1/4 cup raisins
1 cup cheddar
2 tablespoons coriander finely chopped
2 tablespoons fresh mint
pepper
HOW TO MAKE


HOW TO MAKE:
yoghurt sauce: Cut cucumber in very thin slices mix with yoghurt and coriander. Variation : use yoghurt mayonaise. Oil in heavy skillet. Onion and nuts on medium heat till brown. Add vegetarian meat; fry for 5-10 minutes till brown and juice evaporated. Cool down. Mix in 1/4 cup raisins ,1 cup cheddar, coriander finely chopped, celery, fresh mint, pepper. Cut phyllo dough lengthwise in 4 parts. Put melted butter on it. Put 1 tablespoon of vegetarian meat mixture on dough and roll up, close sides of rolls. Place little rolls in oven for 15-20 minutes till brown. Serve with yoghurt sauce. Enjoy!
